A few weeks ago I decided to make some of Shooter Ricks attitude Brats and as I had 10 lbs of Pork butt I decided to make some more Italian sausage too.

Heres the meat cubed up and ready for spices.

Brats on the left and Italian on the right.

Had a friend over for lunch and we tried them. I thought they were pretty good but they lacked something I could'nt put my finger on. I think it may have been caraway seed. My buddy loved them.
