Bought my 1st smoker, a WMS, this past summer. This site has been a big help, thanks to all who contribute. This weekend I smoked my 1st turkey. Frozen, already brined, I added only a Wms-Sonoma rub and some fresh herbs. Used apple wood. Finished very moist and tender, 

The next one, soon, will be a fresh and I will brine.
