One these geese days i'm gunna be done with da goose. Guess more goosey sticks with this batch.
Got the goose ground and being cut in with some beef.
Mixed together by hand. No seasoning added here. Will add seasoning tomorrow before stuffing, smoking.
Zip bag and ready for tomorrow.

Brown sugar and pure salt...... Yes there is 1 tsp of cure #1 in the mix.
Bagged and ready for tomorrows mixing, stuffing, smoking. Made 2 different 5 lb batches. 1 for pepperoni and 1 for sticks.
Pepperoni and slim jims done stuffed and hanging while the smoker heats up.
Made the pepperoni in 32mm collagen in different lengths which is no biggie.
Did some slim jims to.
Hanging at 140* for an hour then pumping to 150*

Got the goose slimmys and pepperoni done. Cut the slimmys to length and vac sealed in cheapo bags....hey it works.
The pepperoni is going in the fridge for a couple days before cutting so the flavor can come together.
The big smoker even makes good for doing jerky.
I finally got around to slicing the pepperoni up. Ready for delivery tomorrow.
Ok forget the knife this time. Out comes the slicer.
The slicer sure does do nice work, but i hate taking it apart to clean it.
