  The brine was salt, sugar, black peppercorns, garlic powder and onion powder. Try to brine with the ingredients that will be in your rub.

  About the grease, trim off as much extra fat and skin as you can even before you brine the quarters.

Beautiful color, cooked up perfectly.. I bet they were delicious. Seeing your food makes me hungry and it's past my bedtime.. not a great combination for my diet!
