I love red beans and rice.
I use this recipe from the Gumbo Pages, been using it for years.
Using some of my andouille.
I soaked the beans overnight. Then chopped and minced.
Sauteed the trinity and got the beans boiling for an hour.
Drained them, put in fresh water,meat and spices.
Bring it to boil and simmer for at least 3 hours. Yummie!!!
Going to make some hot Creole sausage while I am waiting.
That's a smoked hamhock in there with the andouille.
