peppercorns in sausage and salami

While watching "Food Crafters", Rey Knight of Knight Salumi (givin credit where it is due) soaked his peppercorns in red wine to soften them before adding to the salumi mix and grinder. He said it made a soft peppercorn with all the taste. Reduced the  chances of chipped teeth.

I am not a salami maker but have bit down on a few hard corns in the past. Ugly!

I'm not sure if this is relevant on this forum, but with that said, I hope this info would be useful to someone.

Thats another one of hose things that I do from scatch. I grind our own pepper. It's really easy all you have to do is great fresh whole peppercorns and run them thou the spice grinder and whooo you have pepper.
