First off Welcome Beer to SMF.  You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

Welcome To Your New Addiction

Thanks for the warm welcome folks!

There is so much information on this site, its going to take me months to finish reading it all...

I have a quick question for you that i havent seen anywhere...

IN my new build i would love to do a complete wood burning RFS however it may not be that easy to find the traditional smoking woods here in Canada. If I do find anything it will be cherry or apple. Is charcoal a reasonable alternative, or is it too hard to get a big smoker up to temperature? Would i be better off with a vertical smoker? I am using a Char Broil H2O smoker now with some great results, but i cant fit enough stuff on it! Mainly i am looking for grill space! I am sure i can adapt recipes to work with any smoker, I just need to feed the addiction and many friends!

Thanks in advance for any replies...
