Well there is a downside to the fan.
When the fan is on it blows across the heat element which distributes the heat up the back through the louvers. I am using the metal pan that was made for the water, for the wood. The fan blows enough air that it keeps the wood from smoking. Thus thats why i had to bypass the fan with a toggle switch. I'm going to be putting a motor controller knob on the side to slow the fan motor down and maybe this will correct the problem. When i'm done with smoke i switch the fan back on and it holds really decent temps.

Missed this somehow ??? Nice work on that smoker. I saw the pics in the saugage section and wondered what it was built from. I bought my walk in cooler at a school auction for $450.00 and saw 2 of those there but was not sure what they were. To top it off I talked to the wife about if I could make a smoker out of it just because of the SS cabinet. Did not have a clue what it was , and let 2 slip through my fingers. Oh well live and learn...lol Again nice work !
