First off I just wanted to say this a great website. I've been lurking around this site for a couple months on and off. Finally got the second deer in the freezer and now its time to make some sausage, bologna, jerky and hot snack sticks. All I gotta do is build the smoker. Was thinking about using a stand up freezer. I have a char-broil with a side box but mainly use it for ribs, brisket, and shoulders. I was using it for bologna and snack sticks to give it a smoke and then finish them in the oven. Thanks for the great website and hopefully talk to some of you later.

Easy on the name jokes. I heard everyone of them. B.J. stands for Bill Jr.

Don't worry about the BJ, My sister's first two initials are B.M.---That was not good to her in school.

What part of PA are you from---If you put that in your bio, it will come up at the same place mine says "Macungie, PA".

First off Welcome Bill Jr/ BJ to SMF. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.
