Brook Street BBQ, Houston, TX, Sausage?

So I was in Houston for work for a week. Tried several BBQ joints. I liked BrookStreet the best. I really liked the sausages from each of the places I tried though. I liked the smoke flavor more at Brook Street.

Any way, my question is, what is the basic type of "Texas" style BBQ sausage? And if your willing to share a recipe?

Most "Texas Sausages" are based on German recipes due to early smokehouses here in Texas originally spouted up around the German immigrant towns.  I have a recipe in a old cookbook i will share when I get home.

Now where is this place besides in Houston. That is one big town now. We go back from time to time for out youngest son and the baby momma live there. The only thing about eating BBq is we all here can cook/smoke better then most Q restaurants out there.

Ok here ya go this is right out of Legends of Texas Barbecue

 

Harry Greens Juicy Links

 

5 pounds beef and fat

3 1/2 pounds beef

1 1/2 pounds Beef fat

Ratio beef to fat 70 - 30

 

1/4 cup salt

1/4 cup paprika

2 tablespoons black ground pepper

1 tablespoon Garlic Powder

Medium Hog Casings

 

Here is a good venison one I was given too

 

5 pounds fatty pork butt

5 pounds venison

1/4 cup koser salt

1/4 cup paprika

1/2 cup coarse black pepper

2 tablespoons Carlic Powder

1 pint diced pickeled jalapenos with juice

Medium Hog Casings
