Little more progress today. We got the first two coats of paint on! Woo Hooo!!! Going to let it harden tonight, and ruff it up tomorrow and put on the final coat. Hopefully be seasoning it on Monday while we start the final parts of finishing the trailer. Looking forward to the TBS flowing!
Well forgot the camera today. Not that it really mattered, still looks like a smoker, but we fired it up today! Even with 20 to 30 mph winds, the smoker had incredibly stable temps. We had a 15° split between the left and right sides on the bottom rack, and had a 5° split on the top racks of an 8 foot smoke chamber! And that was without doing any adjustments to level or the outflow. The "S" shaped charcoal basket took 30 pounds of Natures Grilling hardwood coals and I threw on a few splits of peach for the seasoning. Got to love this type of charcoal basket. After three hours, I had about 40% of the coals left to burn! Not bad for this size of beast on a windy day. We have a few things to work on tomorrow and Monday. I will have pics of our charcoal basket and the smoker in action on Monday night.
Got a few of the kinks worked out today. The "warming box" was running way too hot when the main chamber temps were nominal, and this was with the active airflow turned off, so we put in some insulation and another plate between the firebox and the warming box. We also installed a fresh air vent on the side to draw some cool air. I was able to keep the temps down in the 175 area with these mods. Got a few pics today. First two are the temps of the main chamber. Now realize there is almost 5 feet between the thermostats, so I am really happy with how close the temps are. Even with 30 mph winds today this thing was rock solid!
Couldn't resist putting on some grub while we were testing this machine. Cooked up some brats, burgers, and some nice thick chops. The burgers and chops just got a dusting of cajun seasoning. They were all amazing. Nice smoke rings, and great flavor. Really looking forward to getting some of the big 4 in this baby!
I love the maze, and it sounds like your warmer box is well on its way toward being perfect.
Just my preference here but I don't like to have pork or chicken over the top of any other meat.

I don't either. Threw the chops up top after they hit 140 for some color.
Hopefully have the rest of this project done by the end of this week. Got a lot of cooking to do before comps start in April!
I checked 4 out of the 8 that I bought, and they were within a degree of boiling water. I will have my digital ports set up here soon, so I will have a digital reference as well,
Got the trailer to the 98% point today. Still have some support brackets to install for the diamond plate skirt, and some suspension work to do to support this monstor. Got to get this thing done this week, because I need to do two smokes on it next weekend. Going to be fun! I did find that one of my thermometers on the bottom was about 10° off. Means the temps were closer than I thought. Should only be a 2 or 3 degree split now.
The bottom of the firebox is the only part not insulated, and is solid. We are building an internal ash pan so we dont have to worry about air leaks. We have a good six inches under the charcoal grate for ashes.
We should be taking orders in about two weeks for patio sizes. This was just my project under the direction of my production guy. The one that knows steel way better than I do lol
Got the machine home yesterday. Still got the charcoal grill and a few minor things to finish, but I needed to do some practice smokes on it this weekend so that im ready for a party next weekend. Did pork ribs, beef ribs, pork shoulder, chicken and brats yesterday. Machine is running awesome. consumed 5.5 pounds of fuel per hour, and was incredibly stable. My Klose is 1/5 the size and consumes 2.5 lbs of fuel per hour. I cannot complain thats for sure. Even during todays smoke we have rain, snow, sleet and heavy winds and the temps are not varying more than 10°. Got some Brisket, Dudestrami, and another pork shoulder on today. Can't wait to take this thing to the comps!
