Good morning everyone and happy new year,
I am hosting the youth group from our church for some new years bowl games and bbq. Weather is not good, rained all night and no let up in sight for this morning either. I loaded the WSM up last night and put a 9 lb butt on. I got up at 3 a.m. and the smoker was holding 275, went back to sleep and got up at 5:30 to find my smoker at 185. The butt was already at 165 so I took it off and will just finish it in the oven at 250. I know it's not real smart to try to bbq in pouring rain but I have done this before and the WSM pulled through like a champ. I still have to do 4 racks of babybacks and don't have a lot of confidence in my smoking abilities in this weather. This is the most people I have ever bbq'd for and really don't want to ruin it. I'm thinkin all I can do is light up another chimney and give the ribs 2.5 hours to smoke and then into the oven with them also. Any advice?
