After making a brisket last weekend and making burnt ends for the first time, I wanted to find a way of having them without having to do a whole brisket. So I decided to try it with country style ribs. I rubbed them down with Jeff's rub and put them in the fridge for the night. The next day I put them in the smoker at 250* and smoked them with pecan. When they reached 165* I wrapped them in foil with a little apple juice. When they reached 195* I unfoiled them, cut them into 2" pieces, put them into foil pans, added more of Jeff's rub, and then sauced them up with Sweet Baby Rays original bbq sauce. Put them back in the smoker for 2 1/2 hours. I let them cool for about 5 minutes and then served them up with Dutch's Wicked Baked Beans and some coleslaw. They were great. Not exactly like brisket burnt ends but very close. The family loved them. I'll definitely make these again.

when you put them back in the smoker for 2.5 hr what temp was that?
 
I have done that using Yoshida's and pork butt pieces, but I really like the idea of using the CSR's!   Yours look great!  Might have to try it again.
