First of all, welcome to SMF. There are a lot of threads on pastrami. Just type it in the search box at the top of this page & they will all come up. Pastrami is one of our favorites, but I gotta warn you. Once you smoke your own you will never be able to buy it in a restaurant or deli again. Also, lately HD has been selling bags of smoking wood. I believe it's a mixture of hickory, oak, & cherry. They come in split logs about 18" long. I just cut them into chunks with my chop saw, and there great for the WSM. The bag is 30 or 40#, and only costs a few dollars. A lot cheaper than buying a bag of wood chunks.

I appreciate all the encouragement from you folks. It's been to cold to actually build this thing yet so I've been lurking around and reading all the wisdom. The information available on this site is remarkable, I just salivate at the thought of smoking some ribs and brisket. My goal this year is to make my own pastramie! Has anyone tried that yet? I'd love to get some good recipes and recommendations.
I'm also looking for a good source of smoking wood. Is the stuff in a bag from Lowes or HD anygood? I'm really in the learning stage now but can't wait for some warm weather.
