Hey everyone -

Cackalacky is the term of affection that we North Carolinians use for our home state! But DON'T call this Wolfpacker a Tarheel or else I'll have to lay the smack down on ya!

So here I am, noob to these forums and a noob to smoking in general. While clearly smoking is the superior way of cooking, I do have a fair amount of non-smoked barbecue experience, as I own a gas pig cooker. And in a pinch, I've been known to roast a boston butt in the oven with a bunch of liquid smoke.

But I am ready to renounce my sins and become a full-fledged smoker! This weekend I acquired a new Char-Griller charcoal grill and also got the side fire box that goes with it. Apparently, there are several modifications that you can make to this set up, so I look forward to gleaning those from this board.

As far as specific types of meat, I'm a really big pork guy. Once I season the grill, my first smoking attempt is going to be a quarter pig for New Year's.

Last, I goofed off at work this afternoon and surfed this board. OMG - this stuff is FOOD PORN! I was starving after surfing these boards!

Welcome to the forum.  Someone will be along to help you with the mods to your smoker.  I'm not familiar with it but there are a lot of folks here who use the same style.
 
Welcome fellow Cackalackian!  As you've found there is a ton of great information here and some really helpful folks.  If you haven't already do a search char griller mods and you should find a lot of information on the mods that will help you out. 

If you ever have questions don't hesitate to ask'em!

I need to go surf the equipment forums, as I'm having a hard time knocking out the panels between the main grill and the SFB. I'm sure there's a wealth of info on this topic.

First off Welcome Rib to SMF. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.
