Propane grill burner is way to hot

I wanted propane due to portability. It will go with me on camping trips and my father already has requested it.

I guess a small electric 110v burner would do the trick if I could regulate the temp easy enough.

The northern tool burner is  35,000 btu rated. Also, my control knobs are mounted under the door on a steel crossmember. How in the world would I modify those controls? They can't be inside the cooker. :+(

The cooker is fired up right now with 30lbs of deer salami. I am glad the wind has finally layed down. I had to block the front and back. Temp is holding steady at 215 now. I smoked for over an hour at 150 using 4 charcoal bricks and waterlogged hickory chips without the propane. This thing holds the heat really good.
