That is some good looking meatloaf!

What was the beef/pork ratio?
It was about 70 Beef and 30 Pork and it was a great blend. Just an accident cause that is what I had on hand - funny how this happens a lot

Scar from what I've been reading about Fallbrook, I think I'd like to have some of yall's avocados.

 PS

We have pretty good cigarettes in Winston. LOL that doesn't interest most people nowadays. We also make underwear and hot sauce and we have more health professionals than you would ever want to meet.
Lookin good Scar, thats a great combination of flavors. I think I should have been born on the west coast because I love the way you boys season your food!
Hey Steve any time you need some spices let me know and I will be happy to ship some for ya

I just sent you a PM - I quit the cigarettes over 25 years ago - we can work on some hot sauce and you can keep the health nuts

I'm in the process of smoking my first meat loaf and 25 minutes after beginning the smoking process I come across this post.  Your Q-view had me running to the fridge to see if I had any bacon, and sure enough, there it was just looking up at me.  I rushed to get it laid on top and on the bottom of the loaf.  Working fast, I did not have the time to interlace each piece like you did, but I'm happy that came across this thread just the same.  It was almost like it was meant to be.

Yeah Scarbelly, your Q-view really helped me out with my first meat loaf.  Click HERE for my Q-view.  Major props to you.

Glad it worked out for you. That is why we are so pushy about qview. Eveyone of us here has learned something from a qview. Even at my old age I still learn from this forum everyday thanks to the great posts from fellow members

I shared your meatloaf pictures with family and they said, "Dad, go for it!".   I'm inspired.  I'll be prepping all but the bacon weave this evening.  My fault.  Bacon was on my list of ingredients to buy and I skipped right past the section.

Your presentation was excellent.  That's an entree that can be served on the most eligant of plates.  If anyone asks for ketchup they had better leave the room.

Any other pointers or hind sights you may want to share?    I'll be smoking three of these.  One to eat tomorrow, one to give to a family, and one for the freezer.

Thank you.

Ron - I don't buy or allow ketchup in my house. I can't stand the smell of it. If I have a recipe that calls for it I make up a tomato sauce or use some spicy BBQ sauce.

As for the ingredients just go with what you like and it will come out great -

WOW...You " HAVE " actually Smoked something besides your Nuts!...Who's your buddy?--->.

thanks for the tips. I think I'm going to make this this weekend and give my guests for brunch a little twist when I turn them into mimi smoked meatloaf sliders with a sriracha mayo.
