A big THANK YOU to raptor for this recipe, my wife loves anything with pineapple in it so as she was looking over my shoulder she asked if that was chicken and pineapple, I replied in the affirmative and she said we have thighs in the freezer. The rest is history, very good recipe enjoyed by all, the only thing I did different is to sprinkle a cumin-cinnamon rub inside and out, sorry no Q-view it was devoured too quickly.
For anyone that would consider trying this, but making the fattie piston is holding them back, I used a piece of 11/4" PVC (smallest I had on hand) and a 1" wooded dowel, I plugged one end with aluminum foil, placed it on the counter top and smashed it with the dowel, sprayed some PAM inside, filled it and placed it in the freezer for about 1 hour, when ready just push it out with the dowel.
I cooked ours indirectly on the grill at 350° for about 45 minutes to 167° and then moved it over the flame to crisp up the skin.
