  the meat comes more darker on the inside than my newer WSM.   
 Hey RibKing,Maybe this will help! I found in my older smokers that the same thing happens. I realized that the fat that has rendered out of previous smokes builds up, and the next time you use it the fat heats up more and more until it becomes rancid. This will impart itself into the meat. I would recommend cleaning the smoker real well with a wire brush, and try again. Maybe this will help!

Thanks Raptor for the info, I'll try that and see if the IT color changes. Butt man was this pork awesome tasting. I have been using the older WSM for about a year and the new WSM for about 6 months.
