Well guys and galls my turkeys in the smoker

turned out to be a complete

(success)

when you end up with(2)18 lb birds picked down to the bone,

and they still wanted more it gives you a warm fuzzy feeling inside.

yep,

My aunt went away with the carcasses.

thinking about smoking some beaver for Christmas,

"for real"

neighbor traps, said he'd trap me one

off my back creak.

so if there are any good smoked beaver recipes floating around or there

hit me with one,

i have baked it before.

not sure about smoking one.

Makes you feel good when everyone devours your food doesn't it. Smoked beaver. HMMMMMMMM Could be interesting. I guess I have never thought about eating one.

not kidding,

 would i rub it down?

soak it in a brine?

pre-slice it and stick it in a net then brine it/smoke it?

 

what would you use, do you have any ideas on seasonings?

should let her cold smoke for couple hours,

then crank up the heat. and still stick the smoke to her and cover her with a cheese cloth, 

to keep her from getting to dark?

 shes dark red meat to start.

when she get done, she will still be dark, not pink on the inside.

looking for the prime rib look,

 need some suggestions for seasonings 

Italian flavored

German flavored

native Texan flavored

There is just so many flavors.

 Then there is a choice of wood to use,

 Wow, I got myself in deep with this meal.

With your help, she could look good and smell good on the dining room table.

I have had beaver in a crock pot before, I is actually darn good to eat. Not much fat on beaver meat so i am not sure how id would smoke. Afraid it might be to dry.

I've had BBQ raccoon before but not beaver. Though I've heard that it's pretty good. good luck and let us know how it turns out!
