First Turkey Brine & Smoke

Well, this Thanksgiving was my first try at smoking a Turkey, and it came out amazing!

I started off with a 16lb Publix turkey.  It only had a 4% solution in it, so I was thinking a brine would

work with it.  I used the Slaughterhouse brine I found on this forum, and brined for 12 hours.  Washed off the brine, and

rubbed with Butter, and a few seasoning up under the skin.  Also sprinkled with a basic rib rub.  Started the smoker

at 8am Thursday, and used Mesquite and Hickory woods.  Put the Turkey on at 8:30, with the MES set at 250 degrees.

Pulled with the turkey reached 165 degrees at 3:30pm.

Had four of our guests tell me that was the best turkey that they had ever had!  I am ready to smoke another one!

Congrats on yor first smoking of a big bird, I know it won't be your last. Tip's brine is a good one to use. It's all good my friend.
