Nice looking dinner!  Chuckies can be fickle when it comes to getting really tender. I had one I took up to 190-200, rested, and it just didn't want to pull. It was fine after a long reheat the next day.  Another one, had no problem. I say do what you gotta do!   I've had smoked beers, one might call them an "acquired taste"?  I'll drink it, but I'm not buying it!   I see you went with another IPA-good choice.
 
IPAs are definitely my favorite beer style. If smoked beer really tatses like smoked ham, count me out.
