My MES bounces the temperature up and down. I think I saw 291 when set to 275, as it was settlling in.
But running hotter than setpoint is good, you can always set it to 265 if you need it to be a little cooler. But you can't set it to 285 if it's not even reaching the requested temperature...

Flowing past the racks and food certainly seems like it would be a challenge. I wonder about ducting the fan's output, within the smoker? Pull the air from up high, for instance, run it through a small metal duct, and dump it at the bottom of the smoker. Or vice-versa.

TallBM, the convection fan seemed to me as though it ought to be a big help to equalize temperatures within the smoker. It's too bad that the results so far may not be quite what you were hoping for.

johnmeyer, I think the popcorn tin approach is interesting. And if I had one just sitting around, I'd try it at the moment, to see if it would help keep my pellets burning longer, vs what I'm getting in my toolbox :)

From the pics, yours is a Gen1 unit, it's looks like the same model I just bought, 20070910. And I was happy with my price, at $140 :) Apparently you can get some amazing end-of-season deals on smokers...
