ThermoWorks has been making the Thermapen for over 20 years (in the U.K.). I started off with the old grey model back when that was all that they offered. The old models were just as accurate as the current ones, but the took 3 - 5 seconds for the temp reading to stabilize out. The current Thermapens come in a variety of colours and, although the manufacturer states that you will get a reading in 3 seconds, I have had the current model for about 3 years and find that I always get a stabile reading in about a second-and-a-half. Another great feature of this device is that only the end 1/4" of the probe measures the temperature... so you can move the probe through a piece of meat and read temperature fluctuations at all depths up to about 6".
