This thing is great! I love how well this thing maintains heat. It can get as hot as you'll ever need to smoke. I like to smoke my ribs hot 275F - 300F. With the 2 burners it gets there and can maintain. It takes some experimenting to get the desired temp. For example, if you want to have the smoker temp to be 225, you may fill the water pan, and only turn one burner to Med. Or if you want it to be 250, then maybe no water, and set to Med. 275. Water and both burners on Med. 300 no water and both burners on high. just take notes on the water pan and the temp knob, and you get dial in the smoker temp every time. And it will maintain that temp the entire smoke. Love the extra width too. I don't care to cut my ribs in half, but this you do not have to. The entire slab fits perfectly. I do not own one personally, but my father has one at the lake house, and i am usually the one who take the time to prep, smoke. And you gotta love the 2 door config. Every vertical smoker should have 2 doors.
