Pros: Holds a finer edge than my old Henckels and holds it longer.
I have an 8" Shun chef's knife and a 7" Shun Classic Santoku. The Henckels' hardly ever get out of the knife block any more. I sharpen them with a Chef's Choice 15 degree unit made for Asian knives with their harder steel. These knives are an absolute pleasure to use and beautiful to look at to boot.
