Pros: Has everything needed for cooking for large meals.
It cooks exactly like the original holding temps well, easy to access all meats quickly. With the doors on both sides and the slide out top rack it allows two cooks to work quickly and keep temp loss minimal. We can work so much faster that it makes up for having two doors open.
Steam cleaning after every cook is easy and keeps it like new. A little Pam sprayed on it (even outside) every other smoke or two makes it cure much like a cast iron pan. I don't have issues with rust on the firebox because of paint loss by doing this.
The warmer box can be used as a warmer if you need to cook more. I often use it when doing 3-2-1 ribs. I do the one in the warmer and it doesn't hurt them to stay in a little longer. That allows me to throw more on the smoker earlier. I have also used it to cook sides such as Dutch's Wicked Beans or Mac and cheese or ABT's etc.
I went with the char just so I wouldn't regret it later. It is perfect for grilling up a bird after a smoke to crisp up the skin. I haven't used my weber since I got this. I used to take it when I took the 84 so I could grill burgers, dogs, steaks etc during those long smokes. Now it's all in one.
I got caught in a torrential downpour unexpectedly once and all my wood got soaked. I threw a bag of lump in the char and got it going. Then I put the wet wood in it and let it get mostly dry. Then put a stick or two in the warmer before throwing it in the firebox. It worked and saved a lot of meat.
