ZA, the Mini-WSM way!

    Being the tinkerer that I am I came up with a new idea for the Mini-WSM. That's right behold the Mini-ZA pizza oven!

    Last night was the inaugural test run. Went pretty good except I'm no pizza dough chef and the wife who is was out with girlfriends. It also doesn't help that I didn't have enough flour! My dough ended up to sticky and wet. First pizza worked okay, but the second stuck to the peel and caused some problems! 


    The ingredients. Shrimp, fresh spinach from our garden, tomaters, olives, cheese and pepperoni, jarred sauce.

    My little sous chef wanted to make his own as usual. I was surprised that he wanted the spinach, and he wanted it chopped!



    That's a wrap! <y pizza didnt turn out so great like I said it stuck to the peel. Ended up more like a Calzone with sauce in it, I know sauce in a calzone, ugggghhhhhhh

    And now mine.. Was going to be shrimp, spinach, olive and tomato pizza, but turned into a folded up mess! Still tasted good. Had to put it in foil when I flipped it in order to keep the ingredients in it....

    Looks like the mini is a good pie cooker.

    Even your mess pie looks good.

    Thanks Adam! It worked out pretty good. A few things I am going to change though! I am going to add a terracotta diffused on the upper rack to direct the heat back down into the oven. I ave no idea how hot it got in there as all my therms cut out at 400° I know that it was hot though. Didn't take long for the pies to cook. After the cook was done I left the fire burning and it hovered around 320° for two hours before it finally started cooling down. When I pulled the therm after about 3 hours it was down to 240° All in all fun and the boy is already asking for more!

    Thanks Kevin! I like to tinker! I will admit that I am more of a wood butcher than a metal worker. I was just thinking that other day that it's about time for me to start building another sailboat. Then the wife off and suggests I build us a Tear Drop Trailer. Oh what to do!

    Of course you'll build and mount a mini on each, right?

    But of Course! I already have the kitchen for the Tear Drop designed in  my head and it includes a nice little niche for the mini-wsm and supplies!

    We do a couple of boat camp trip a year and the mini goes along on those! Nothing like hot wings and ABT's when your camping in the woods!

    Ok ok ok you have me convinced. ..... I must build one. The wife is on board too.... I only get one pot and I have to have the pizza oven.

    Best little smoker out there! I am going to make the cut out into a door for mine. The main reason is so I don't have to pack two pots when I go camping. Gotta have pizza, smoked tri tip and wings when camping!

    My current plan is to use rolled flashing. I'd like to get a gasket of some sorts between the flange and the pot. So I may have to do a couple layers the same size as the cut out. Then add a final layer that is slightly larger. I will hinge one side and the other side will get a latch.

    I was thinking for the door to look at it like a big smoker out of a tank. Take the cut out and trim with some metal. Hold it together with rivits and seal with some high heat silicone gasket material. Use a simple type of latch that will pull tight for smoking, but will allow for the door to be removed for pizza.

    That was my original thought too. But all the flat stock I found was thick enough that I thought it would bend the shape out of the cut out when attaching it. I don't have a roller. So I thought the pre-rolled flashing would work to keep the shape.

    Thanks JD. I saw your post on the other thread. I may take some time this weekend and tinker around with some ideas for the door.

    Thanks Bear! Chopped Linguica sausage and peppercini peppers is my all time favorite Mmmmmmm!

    Ya know Case... Whenever I flip a pizza like that just bring it into the house and tell everyone you decided to make a Stromboli   Then they all say " Ah great! A nice change"  Ha!!
