Mother nature pervailed and I had to cancell taking a couple kids out turkey hunting. Tornado, 4 inches of hail and 2 inches of rain made the property impassible.

So I went out and picked up some meat to smoke today. Found a couple good deals at Safeway. This 7 pound chuckie had my name all over it. They had a bunch of massive 7 bone chuckies there. Some in the 10 pound range. I injected it last night with a mixture of Yoshida's, apple cider, and a splash of apple cider vinager. Soaked the chuckie in the left over injection over night. Put some beef rub and a bit of corriander on top, and threw it into the MES this morning. The water pan is my standerd Water, beer, vinager, apple cider, and chipotle sauce. Smokes on and operation torture the neighborhood has commenced!

Yup it was dissapointing not to be in the woods this morning. I mostly guide for youth and ladies now and day's. Fun is in the calling and tactics for me. Didnt even buy a tag for myself this year. So I drown my sorrows in smoked goodies today

Good news is I still have two hunts to go on this season. Next weekend is a three day camp / hunt with two kids that have never hunted Turkey. Should be a hoot!
 
Chuckie sitting at 168.. Waiting till 175 to wrap. As you can see I smoked it in a foil pan. At about 4 hours I poured off the juices into a bowl. Put it into the fridge to make aujus. Took a taste, and can we say yum. Yoshida's beef aujus! Going to make for some great sammie dip.

Man oh Man that some mighty fine looking chuckie to me here. I'm glad you didn't get anything hurt in the storms but I'm sure you will be putting a hurting on that chuck soon enough.

Wow that looks great. A chuckie is one of the few things( brisket being another) that I haven't tackled yet. I need to get my beef on. Did some beef ribs tonight though and they were pretty good.
