Yardbird brined overnight, injected, rosemary under skin, and rubbed. Joining in for the smoke, please welcome caseless salami! Just went on so it'll be a few hrs for finished view.
 
I haven't had lunch, and you upload that pic. Well, it looks great and I'm looking forward to the final Q View. I'm going to lunch now.
 
I myself love the stuff. Easy as a $3 hoo_er (insert a certain letter that is between J & L ) to make and since I was doing a chick in the drum...why not add them ( most of the time I just throw them in the oven) Always do alot more than needed so I can freeze a bunch for poker games, football, etc.

Just flipped the bird and salami rolls...... Lookin bueno if I say so myself... Bout another 45 min for another flip. May take pics.
 
Two hr flip. Salami came off at 164*. Bird, I know will take another 25 min before I poke it with a Thermopen. BTW......Salami good.....
 
Finished product. Gave the other half of the chix and a salami to a friend. Ate the other half that is sliced. Rest for the mrs.... Was/is very tasty!
 
I was just about ready to go braise some pork belly (Chinese style) but you just threw a monkey wrench in my works. Man o Man that all looks sooooooo good! Now I want chicken and your salami.
