The missus and I had a lot of prep work to do for our Christmas gathering, so something simple and tasty was in order. Why not carne asada tacos? We picked up a couple of pounds of pre-marinated carne asada at the Mexican market, along with fresh tortillas and salsas. While not as good as my homemade carne asada, this stuff works fine in a pinch.

Here's the meat in the bag ready to go on the grill:



Set up the Kingsford Oval using two bricks for a reverse sear, and added some oak to the coals:



Once the meat had cooked on the cool side and absorbed some smoky oak goodness, time to finish it off with a nice hot sear:



Meat plated and ready for a brief rest:



Taco assembled with pico de gallo, salsa roja, and a small slice of avocado:



I know, the taco pic isn't very good, but the tacos were great...I ate 5 of them!

Looks great. I did some beef fajitas tonight for dinner with premarinated flank/skirt. Didn't think to give them a smoke on the cool side first. Great idea. Will do that next time. Thanks.
