I have three trees on the property that were recently cut, need to know which I should be saving for my smoker.

Crab Apple

Plum

Pear
 
All 3 are good. Crab apple is just like regular apple. I have used all but pear, but have heard nothing but good things about it. Just make sure it is well seasoned before you try using it. Cut it up, split and stack it loose in a breezy sunny location and you will have smoking wood by midsummer if you can keep it from getting rained on.
