Wings for Memorial Day

    I used my smoker for the first time the other day and did a 6lb chicken,everybody loved it but now they want me to smoke wings on Monday. Help,I need some info on wings in the smoker. I would like to know the best temp and roughly how long. Thanks!

    well if the chicken was jam up, do it the same way and you should have another satisfied group

    I like to soak in buttermilk over night then drain in the am. I coat with run and smoke at 300 for about 1.5 hours or so then finish on a hot grill to crisp.

    First of welcome Polxc to SMF. If can will you swing into Roll Call and introduce yourself and your equipment and we can give you the welcome that we like to give to new members. Now as for your chicken I would soak it like Brian (bmudd) said and then smoke it hot also like he said. They will be nice and smokey and some of the best wings that you have ever had too.

    Since some smokers have a hard time or cannot reach 300º +, if that is your case, the only other thing to do is smoke for around 2 to 2 1/2 hours, then onto a hot grill to crisp up the skin. If you don't you will have rubber wings.

     I only use around 200º or so to smoke them. If you go higher than 300 you will crisp them up some on the smoker itself but they will receive little smoke in such a short period of time. Low like I do, they will get the smoke, but will need the grill to crisp up.

    I CHEAT!!!

     Smoke the wings till temp is just below the temp you consider done .Then place the wings on baking sheet(s) and crisp under the broiler . when top side is crisp to your liking flip and do the other side.
