It's 8am here in Sleepytown Mo and in a few minutes it is gonna be smellin good! Wifes birthday is today so I am cooking a pork butt for her, it is an 8lb chunk and I kept it simple. The rub is salt, lots of pepper, garlic powder and a good dose of cayanne powder. The main wood I use is hickory but I have a bag of apple chips I'm gonna add to this for kicks and giggles. I'll do my best to get some pics of everything. I'm using a Brinkman offset and trying a modified Minion set up with the wood and coals.
