I received a new Masterbuilt XL propane smoker from my wife for Christmas.  I already own an Orion outdoor cooker that does smoke but cooks more like a convection oven and a nice 4 burner gas grill that I use a wood chip box on one side to turn my pit into a smoker.

My son and I put it together and cranked it and season it with some pecan that was from fallen branches in my yard.  After several hours of seasoning it, it was time to put it to use.

First load threw it some homemade sausage, pork tenderloin  and a couple of whole chickens.  I used some apple wood chips.  Once this was complete.  Cleaned out the wood tray and added a mixture of some mesquite and oak and threw in a nice 7 lb brisket.

It must of been good as there were no left overs.

My son is ready to make 50 lbs of sausage and smoke it.  I told him hands off my Christmas present.  Its going to be hard to keep him away from the smoker as he works in a butcher shop and can bring any cut of meat he wants home and he does like to cook and eat.

Having a butcher in the family if you like to smoke meat is a good thing!

Welcome,  sounds like you are diving in head first using your new smoker.   BTW we like Qview around here so shoot some picks of your next smoke and let us take a peak!

Congrats on YOUR new smoker but I think that I might have to go and buy another one for the son thou. It could turn out pretty darn good for you and the wife to.

Congrats on the new smoker. With a son in a butcher store all you have to do is sell it right - tell him to bring you the meat and you will have it ready when he gets off work - WIN WIN

Welcome to the SMF Family...JJ

Wow!  No dipping your toes in the shallow end of the pool for you.  No, you do a cannonball into the deep end right off the bat.  Chicken, pork, sausage and brisket with 50lbs. of more sausage getting ready to go in.  Impressive start to you new addiction
