When to buy

I will be cooking a few 5-6lb briskets, 2 turkeys(one deep fried), a few chickens, and some spareribs on saturday the 5th. Friday night I will brine the poultry and rub and wrap the brisket. My question is "how far out can I purchase the meat?" I went out looking at prices last night and decided on buying from the BJ's up the road. The butcher said they recieve deliveries thurs and saturday. I want to have the meat in my possession as soon as possible to relieve fear of not finding what I want, but I don't want to buy too early. Is Saturday too early? I am going with cryo packed brisket and ribs and don't want to buy a frozen turkey. Let me know what the experienced men and women of this forum think. Thank you.
 
Buy the Cryo stuff now if ya want and keep in the fridge. Buy the turkkey a day or so before. You'll be brining I assume? You want 12 hours or so for that anyway.
 
The cryo stuff you can get no problem as mentioned. Just make sure that your fridge is below 40 degrees and no leaks in the cryo
 
Even a "fresh" turkey is frozen. SO check on that to make sure you have proper time to thaw, brine, smoke.

Also, cant your butcher at BJ's just take an order for you and have ready for pick up on said day at pre agreed time?

They usually accommodate you like that. It's worth asking for peace of mind.
 
Thanks for the feedback. Butcher said the Turkey comes flash frozen. I just didn't want to pick up stuff too early.
