Myself:

-Clams on the Weber

-Pancetta wrapped Pork Loin

-Shrimp Stuffed Jalapenos

-Eggs 

-Twice Baked Mashed Cauliflower 

-Twice Baked Mashed Potato's 

Smoke ON!

We are double smoking a ham. Then on new years eve a new York strip roast! Then going to watch michigan st. stomp bama!! Best to all the great smokers on this forum around the world . Merry Christmas and happy new year. God bless our servicemen and women around the world.

Just finished 38 pounds of buckboard bacon and 13 pounds of brisket for pastrami which need to be sliced and vacuum packed.  Just started 17 pounds of a Szynkowa style cold smoked Polish sausage and we're double smoking a small pasture raised ham (from neighbors) for Christmas dinner.

We do an all fish Christmas Eve.  My wife is not a big fish fan at all but shrimp and white fish like halibut or cod are fine for her.  I have both.  Going to try smoking broccoli and cauliflower in a cheese sauce too.  Still noodling that one through how I want to do it. 

Also double smoking a ham on Christmas Eve to serve Christmas morning with eggs and her homemade Amish Bread cinnamon rolls. I may also be smoking chicken breast for her holiday tradition of tostadas for the Christmas midday meal, along with tamales.  She's not Mexican and has no idea how that tradition got started in her family but it is what she remembers every Christmas so that's we're having.  One daughter is visiting sans hubby so it will be a small group in the Ray household.  Lots of food though.  That's the Italian half of me.

Have a 17.5lb brisket that I'm going to be smoking. It's about 3 lbs bigger that I was looking for. But I had already gone to three other Wal-Marts looking for brisket. My other options were a 7.5lb, 18.5lb and 19.5 lb. 

There's also a ham involved somewhere, but I don't think I will be smoking it. 
 
I'm doing some elk jerky tomorrow.

Tomorrow night we are doing homemade pizza - I bought all the stuff as a surprise Christmas gift to the Famdamily: Pizza stone, pizza peel, and all the makins (should be great fun)

Christmas we are doing Ham.

Its fun reading what everyone is making, its fun. - What a great forum.

I'd give out some points but it said I have to wait, I gave them all out tonight. I'll come back and point you up Jason!

We love doing the homemade Pizza, we put the stone on our Weber, off set the coals, add some chips for a great smokey flavored pizza.

Double-smoked, glazed ham for a late lunch today..

6 pork shoulders on now...just foiled the last two...turning in soon..

Big brisket going on tomorrow afternoon when the pork is done...

​Would love to Gary.  Unfortunately yesterday was overcome by events so the cheesy B&C with onions was put off to later.  I know how I'm going to do it.  Will post the recipe after I try it!
