Whatcha making for the Super Bowl?

  1. Title says it all! I'm always amazed at what guys make for certain "holidays", so I wondered what everyone was having for their SB party. Doesn't have to be something from the smoker, but that's why we're all here haha!

    I'm going over to a buddies with a small groups of people, so I was going to smoke some wings to go a long with what everyone else was bringing.

    I have Puled Pork I made last weekend in the freezer that will be made into??? I have 2 Chicken Courdon bleu fatties in the freezer as well to do something with. Maybe wrap some pastry dough around them or something. I need some ideas actually, glad you started this thread Burly.
  3. From the smoker: Smoked wings, cutting up a few pounds of smoked cheese, and some deer snack sticks

    Will probably also make some queso fundido dip with homemade bacon in the crockpot.

    My mom's making chili and my brother is making a bunch of sides.

    There's always way too much food at the annual party. No matter how many people attend, there always seems to be twice as much as we need.

    Last year I smoked a Tri Tip and sliced it thin and chopped it up and made mini meat pies.

    I did Chicken Thighs on my Master Built 18.5" kettle, used KBB and a few chunks of Pecan

    Going to make some Blue Cheese dip and Buffaloo the Thighs in the oven.

    i just put some venison kielbasa in smoker,plan on doing bb ribs saturday,i like letting them sit for a day before i eat them,the wife is going to do wings and deviled eggs,

    I need to start clearing out our freezers for the upcoming King Salmon season, so I'll be smoking.............yes Salmon.  Will make some Superbowl Salmon Nuggets.

    Here is what's going on Sunday:

    Pork Loin Rolled & Rotisserie Smoked

    Recipe By: Matt S

    Serving Size: 4


    What makes this so good is the flour capturing all the drippings and turning the outside into delicious gold. We go heavy on the lemon pepper.


    3 1/2 lb rolled pork loin roast, tied together, fat side out

    2 tbs salt, maybe 3

    2 tbs garlic powder, maybe 3

    3 tbs lemon pepper

    3 tbs flour, maybe 4


    1. Grill setup: Hickory wood chips. Grill on high (all three burners) and wait 15-20 minutes. When the chips start to produce smoke it’s time for the pork to go on and add the amazing-tube-smoker with hickory pellets. 

    Reset grill: turn off center burner.

    2. Heavily sprinkle pork loin first with Garlic powder, then kosher salt and finally lemon pepper.

    3. Dredge in flour making sure it is covered completely. Secure rolled loin to skewer making sure it is centered.

    4. Place on grill, turn on rotisserie and close lid.  Maintain cooking temperature at approx. 300-325º and cook for 1-1/2 hours. Check meat temp after 1 hour & 15 min. Remove when internal reaches 165º.


    This is an indirect cook, make sure the center burner is turned off!  Do NOT cook with a burner on under the loin. Tube smoker should be in the center as well.

    The meat IT will continue to rise for a while when resting on the serving tray. You can remove the skewer while it rests (10 minutes - minimum).

    Bivalve (clams, mussels, scallops & oysters) pizza with alfredo sauce and Fluffernutters.  I'll probably just use a little smoked flour in the pizza dough.

    Jap and cheddar kielbasa was requested at the super bowl party I'm going to .. had to get busy last weekend

    Hey that tasty looking kielbasa needs a classier cracker may I suggest Chicken in a biscuit. We will hopefully smoke some wings can't watch the game as we don't get NBC we usually end up watching a movie anyway.
