What to do with grease leftover

I have been thinking of what to do when i come up to the situation again. On the 4th of July i made 10racks on my smoker and had alot of grease left in my grease trap. What do you do with this and how can i get rid of it. I had about a gallon of this stuff left.
 
What kind of smoker? Use a water pan? I don't know what a grease trap is outside of the restaurant.

It is probably mostly drippings and not grease. You can put in fridge and skim the fat. The rest is good. In the restaurant we used that for a base for bean soup and split pea soup. There are other uses as well.

Longhorn deluxe whith the stainless steel drawer that grease drips from smoker.
 
If yer feeling particulary "green" bring it to a resto with a grease container. They ususally sell the stuff to processors who make use of it... bio-diesel being one use.
