What do you all do with the trimmings when turning spareribs into Kansas City Ribs

I'm getting ready to smoke some spareribs tomorrow and want to trim them to be Kansas City cuts. I hate the idea of throwing all that good meat away. What do you all do with them?

Yes, treat them the same.  Or experiment and don't foil.  I usually skip the foil on them and end up with great bark that peels off the top and bottom. 

IF it survives past dinner time, they go great diced up in baked beans, collards, etc...

I did trim (but may not the next time).  They are all rubbed up and they will go on the smoker.  I like the idea of snacking on them all day

They make great snacks while waiting for the ribs to get done.

One of the guys cubed them up, covered in BBQ sauce & put them in a pan on the smoker, similar to burnt ends.

It looked like a good idea and think the next spares I smoke I will try that.

I wish I could remember who did it.
