I'm from Sheridan,In. and new to smoking. I've thought about getting a smoker for some time now. The company I work for started a new program were on your anniversary you get to choose a gift. I choose the Brinkmann smoke-n-grill that also came with a cover.

I'm on my 3rd smoke today in 2 week and have already purchased the Maverick ET-732 from A-Maze-N products. The 1st smoke was some large chicken breast and the 2nd was 2 whole chickens. Both came out great and very juicey. Today I'm doing my 1st rack of spare ribs. Kingsford charcoal with some hickory chunks. 

I'm already hooked on smoking and reading all the posts on here I'm already thinking about upgrading to the WSM, love the Weber products. I just wish I would have gotten into smoking sooner!

As I'm typing this I just looked at the Maverick remote and I'm up to 280 already after 30 minutes doing the minion method, need to learn to control the heat better or just the get WSM!

Smoking Meat is addictive (as you've found).

Whole chickens are my favorite on the smoker.

The WSM's are very nice, i hope to have one someday.

Well here's a picture at the 2 hr. mark just before I foiled them. It was running a bit hot at 1st so I'm going with the 2-2-1 merthod. See I'm learning already. I think the spike in heat at 1st was due to too many hot coals to start. It settled down an stayed between 225-250. I really like the new ET-732. Being new I went with a store bought rub (Emeril's rib rub) and KC Masterpiece.

Welcome to the SMF Family...That's an untrimmed rack of Spare Ribs you got there...I think you may find 2-2-1 not enough...Put the Ribs back on at as close to 225*F as you can get, add some Smoke wood and let them go until tender, another Hour +/-...JJ
