I've used mine a few times now, the newer model I got at Bass Pro on Black Friday. I've noticed the temps are way off on my model over what the controller reads. It seems when the element is on and heating up, my remote probe in a potato on the middle of the top rack reads 50 degrees higher than the controller temp. Once the element shuts off though, it seems that the temps stabilize closer to the actual controller temp.

It also seems to get up to temp really quick too, something the older model had issues with. I'm going to try and do a multi-rack temp test this weekend to see how the fluctuations vary throughout the smoker.

Is that the 30inch or the new glass door 40?

If you know where the controller temp sensor is , put an oven thermometer close to it and see if they differ a lot.

Heating up a little quicker would be a great improvement.

Yes, this is the 30" model. Sorry for the lack of info. I have a buddy who is going to lend me a couple of his remote thermos to use in this test.

You need to remember that the unit temp probe is in the back wall. It's going to give you a different reading than one in the middle of the middle rack. It's good to know the difference so that you can realize what your true temps are at the rack. I'd say when the element is on you are getting more heat obviously to the middle of the unit than on the back wall where the probe is and when it kicks the element off, your are stabilizing the inside so that the temps come closer together.
