Wow it looks great  what a great  variety and all looks so good .can you share the Italian hot sausage recipe

Here you guys go.

Hot italian:

5lbs pork
1cup cheap italian red wine
1cup chopped fresh parsley
5tsp kosher salt
1tbsp granulated garlic
1tbsp ground black pepper
1tbsp cayenne pepper flake
5tbsp fennel seed
5-tbsp paprika

Mexican chorizo:

5lbs pork
4tsp ground cayenne
5tsp granulated garlic
1tsp Mexican oregano
1tbsp chipotle powder
1tbsp ancho powder
1tsp ground black pepper
2tbsp paprika
3tbsp kosher salt
1cup cider vinegar
Great way to spend the weekend making some great looking sausage!

The beer sticks came out really good. I think I may make Yuengling a permanent ingredient in my beef snack sticks from here on out.

Looks great once again Joel,them cut offs are gonna make great treats or maybe first taste is free kinda thing.I hope to come claim that lone wanna-B beer when things get back to normal.Thanks!
 
Some of the ends will get frozen but I will take about 1/3 of them into work tomorrow.

I don't see why not Bob. The flavor is what you are after and not the alcohol.
