    I was wondering if anyone had any helpful tips on smoking duck or goose breast!!! I am new to smoking and just finished seasoning my new MES SMOKER. I have fresh goose and duck breast to smoke. Really enjoy all the tips and reading all on the Forum. Thanks Wayne

    Brine the breast over night and wrap or cover w/ bacon. smoke at 230 till internal of 145-150.

    eman is right .but you must remove the skin of the bird  if you keep the skin and add bacon you must have a doctor as a side dish[​IMG]
