Danny if you are referring to the WSMs ,they are great smokers I use mine without the water pan.I did get a BBQ Guru for it and it is set and forget,did a Pastrami on Sunday with it.
tropics that good looking pastrami, thats makes my mouth water,only tring to see if the water smoker (competition style is worth the money) does it make your food come out more juicy. i have a lang patio 36, and i do not have any problems with dry things that i smoke, if i did, i think it would have needed brined.
