Hiyas!
I'm Tony. I live near Lexington, SC. I spend my work days staring at computer screens, so I wind down in the evening and weekends by cooking.
My Father-In-Law gave me a "Little Chief" electric smoker for Christmas almost two years ago, and I've been lurking around these forums since then reading and picking up tips. Usually it's been BBQ Boston Butt, and smoking fish.

I'm starting to branch out - just tasted my first Canadian bacon this evening!

I'm also finishing up building a new larger smoker, made from some scavenged pieces from work.

I figured I'd post my pics on the above two points, but thought I should introduce myself first.

Good to have you posting, as a lurker you already know much about the website. Make sure you fill out a bit of your user cp profile so we know just the basics about you, Kind of smoker/s , Hometown etc. It helps when we try to solve any problems or questions you might have.

Hope you have fun here.

So far it's been mostly fish: Salmon, Catfish, Trout, etc..

Occasionally I put a pork shoulder in it, but since the little chief doesn't get much over 160, I smoke it for several hours, then cook it in the oven.

Same thing goes with brisket.

Hello and Welcome. You will find info on about anything you want to create here on your smoker.

I also noticed you live on/near Lake Murray. Being an avid bass fisherman, I must say what a great fishery you live on. I am envious.
