Wanted to say Hi

    Hello,
    Kinda new to the forum, signed up a while ago but haven't posted much. I live in So Cal and try to smoke as much as possible. I have 3 racks of baby backs and a whole chicken on the smoker now. I use a Brinkmann Pitmaster Deluxe and did the mods to it. It smokes a lot better after the mods, much longer burn times and really steady heat for an inexpensive smoker. It's nothing fancy but it sure beats what the local restaurants call BBQ. I'm kinda old school, I use Big Green Egg lump and hickory chunks, like I said nothing fancy but I look forward to every time I smoke something and can sit down with family and enjoy good BBQ. I keep trying and I learn something new every time I smoke, maybe someday I will be able to call myself a pro. I have learned a great deal from this forum it really gave me a head start when I started to learn to barbeque.

    Hello Steve, nice to hear amother SoCal smoker join the ranks of the SMF. Fancy hardware is no shoe-in for great Q, it's all in the hands of the person behind the job. Glad to know that you've enjoyed reading/learning from great tips/advise from our members. It's all good my friend.

    It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

    Thanks for welcoming me to the forum. I did sign up for the E course and I'm sure I will learn a lot from it. The Q from yesterday turned out OK the chicken was great, it was the first time I brined and I like it a lot. I think next time I will try injecting. The ribs could have come out better, I think I need to modify the 2-2-1 method, They were a little dry, so maybe next time go 1-1/2 hrs before I foil them. Oh well still learning.
