Virgin butt

    Smoking first butt on my new char broil offset. Started at 1pm since I'll be up all night anyway. Using charcoal and Apple, hickory and oak to smoke.

    Just opened and checked temp for the first time in about three hours

    It's at 165 hopefully will be done in a couple of hours

    Any of you offset users have any advice for stabilizing temps or is it just the norm having to fiddle with the fire every 35 to 45 minutes?
