Venison Summer Sausage Ideas.....Help!

    I want to try something new....

    Does anyone have any good ideas for me to try?

    I made a "sausage" type thing a few months ago......    below is the thread....   AC LEGGS #103 hot Italian seasoning...  made regular pig casings and muslin casings....   The muslin, I brought the meat up to 150 ish for several hours in a 160 ish smoker until the meat started to dry out and the casing stiffend up from the meat drying...   sliced it thin and it a very tasty sausage...   much better than the stuff you buy in the store...   I think the AC LEGGS beef sticks would work also...  but the Italian has great flavor...

    Amazon....  Check all the vendors because some have it cheaper ..  type in AC legs seasonings...  some are "add on items" that are cheap...
