Venison Snack Stick casings bitter

Hey guys. I made a batch of venison snack sticks today. I smoked them for an hour with Apple chips then swapped to hickory pellets due to lack of smoke with the apple. I have pulled them and cooled on the counter. They taste great however the collagen casings taste a little bitter tasting. That is the best I can describe it as. Any thoughts? Could it be the smokeiness on the outside of the casing? Can I give them a quick water bath to fix or will that ruin the casing?
 
Bitter is caused by bad smoke. It doesn't take much smoke to get good flavor. You want TBS not white smoke. Just a few minutes of bad smoke will make everything taste bitter. 

You didn't say what smoker you have or what temps you are using. The search bar at the top of any page has a lot of good ideas for SS.
